I was not the first one to be called The Snack Officer, but since I got to meet my friend Magdalena Sz. I wanted to become one. Hence I continue my research towards simplier and tastier dishes and snacks doable aboard.

Wikipedia says that the tradition of eating donuts on the last Thursday of Carnaval Season, was stuffing them with lard, bacon and meat followed by some amount of vodka. Well, I made mine sweet, gluten free and in two versions. One with buckwheat flour and cream cheese others with corn flour and cottage cheese. You choose the filling if any and what to follow them with.

Ingredients

  • 2 eggs
  • 200g cream cheese (or cottage cheese)
  • 1 cup buckwheat flour (or corn flour)
  • 1 ts baking powder
  • 2 tbs alcohol (I only had some Grappa)
  • Lard for frying
  • Caster sugar for topping

Preparation

  1. Beat the eggs in a bowl or pot.
  2. Heat the lard in another pot for frying.
  3. Add cheese to beaten eggs and combine.
  4. Add flour, baking powder and alcohol. Mix well.
  5. Take a little amount of dough on one teaspoon and put the dough into the hot lard using the other teaspoon. That will make them fry in a ping-pong balls kinda shape.
  6. Donuts are “smart” enough to roll over by themselves ;)
  7. Once brown take them out with a long toothpick or a strainer.
  8. Cover them with custer sugar.
